Granite Countertops

We are building a new house, and (http://maplered.com) we originally wanted to use Kashmir Gold in our kitchen, but after reading some info on this site, think that it is a bad choice as the Stone (http://g603.net) is too porous. We are reconsidering the following and (http://maplered.com) are wondering about any pros or cons of the choices:

Dakota Mahogany
St. Cecilia
Giallo Venziano
Persia Brown
Dakota Brown

Any other recommendations in the warm tone (yellow/red/brown) color range? We have Absolute Black now which is very easy to maintain, but we want to change up the color scheme and (http://maplered.com) were looking for a lighter Counter (http://GialloFiorito.com) top though it seems those are more porous. We prefer a shiny finish so sealing shouldn't be an issue. We just want something that is easy to maintain where we don't have to worry about staining or spotting.
